On the first Monday of each month in 2015, La Cocina Histórica will feature recipes from Josefina Velázquez de León’s month-by-month cookbook series: Los 365 Menus del Año.
Some of the fruits and vegetables suggested in the June cookbook include corn, squash, string beans, peas, chiles poblanos, spinach, watermelon, pineapple, cherries, mangoes, apricots, and pears. The menus below make use of several of these fruits and vegetables.
One surprising oddity of this volume is that several of the menus list the recipes out of order, with the soup course listed after the dessert. The recipes themselves appear in the usual progression, but since the reversed listings occur several times, it is difficult to simply dismiss them as typesetters’ error.
Menu No. 12 includes Calabacitas Rellenas de Elote (summer squash stuffed with corn), Postre de Chocolate (Chocolate dessert), and Sopa de Bolitas de Avena (soup with oatmeal dumplings).
And Menu No. 13 consists of Pollo al Jerez (chicken in sherry), Taquitos de Lomo y Papa (pork loin and potato taquitos), Compota de Peras (pear compote), Sopa de Hojas de Nabo (turnip greens soup).
